Q. The case is too warm.
A. Usually a dry defrost will fix the problem

Q. Product seems stringy, gooey.
A. A few degrees colder will fix this.

Q. Its too hard.
A. If it is too hard its too cold, try 3 degrees warmer.

Q.There is a skin on the surface.
A. Product needs to be covered at night, or has been in the case too long.

Q. How do I know if the product is bad?
A. It will have a grainy, gritty mouth feel or 6 months from the production date.

Management of your Gelato display

Daily:

  • In the morning reload pans with fresh product
  • Never leave the last bit in a tray, put on top of a new pan.
  • Some flavors may skin if left in the case untouched, run the paddle or scoop over the top in the morning to make the pan look inviting.
  • Try not to blend in  the folded-in items like caramel or chocolate swirl.
  • If a flavor is being ignored, replace with an alternate and then put back after a few days
  • At the end of the day cover pans to avoid refrigerator skin
  • Weekly:

  • Wash stainless pans and inside of gelato display
  • Keep your display looking clean.
  • Make sure  the engine is clean from lint for good air flow.
  • Look at refer coils to see if  the defrost is cleaning them, if not that night unload the product and shut off the unit over night. (Dry defrost)
     
  • Turn off the power and thaw out  overnight (dry defrost)
  • May take 12-14 hours after humid months, some  locations dry defrost weekly.
